Our culture and brand come from the love our birthplace, the great city of Philadelphia! We grew up in homes where families spent all day cooking and took pride in bringing you the best tastes and flavors from the Old World. Everything we make is carefully and thoughtfully prepared because it's who we are!

I’m George, born and raised in the heart of Philadelphia, where the sizzle of steak sandwiches on the grill is a cherished tradition. With relatives still calling the city home, I grew up surrounded by the diverse styles and flavors of Philly’s iconic eats—each bite a memory of family and community. My early years were spent mastering the grill in local pizza joints across the city, and I still carry the proud marks of those "grill hands" as a testament to that time. Cooking and working in the kitchen remain some of my fondest memories, forging a deep connection to the food and the soul of Philadelphia—a taste I’ve longed to recreate since moving to Raleigh.

Driven by an understanding of the subtle nuances that define an authentic Philly cheesesteak, I’ve embarked on a mission to bring that "real thing" to North Carolina. From transforming my food truck trailer to sourcing the finest ingredients—like Stravecchio aged provolone cheese sourced from DiBruno Bros in Philadelphia, to hand-shaved prime ribeye and Italian rolls baked with a secret recipe at La Farm Bakery in Cary North Carolina —I’m pouring my heritage into every detail. Paired with a commitment to health standards and local compliance, this venture is my way of honoring "back home" while building something new.
